Homestyle Chicken Noodle Soup

Equipment

  • 1 Dutch Oven or Large Soup Pot

Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 large carrots peeled and sliced
  • 2 celery stalks sliced
  • 8 cups chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 8 oz egg noodles
  • 2 tbsp fresh parsley chopped
  • salt and pepper to taste

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the carrots and celery and continue to sauté for another 5 minutes.
  • Pour in the chicken broth, shredded chicken, thyme, bay leaf, salt, and pepper. Bring to a simmer and let cook for 15-20 minutes, until the vegetables are tender.
  • Add the egg noodles and cook until tender, about 8-10 minutes.
  • Remove the bay leaf and season the soup with additional salt and pepper, if needed.
  • Ladle the soup into bowls and garnish with chopped parsley.

Notes

If you're feeling under the weather, you can always add extra garlic and ginger for an added boost of immune-boosting power. 
 
You may need more time to prepare this dish if you need to cook the chicken and shred.
