Homestyle Chicken Noodle Soup
Equipment
- 1 Dutch Oven or Large Soup Pot
Ingredients
- 2 cups cooked chicken shredded
- 1 tbsp olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 2 large carrots peeled and sliced
- 2 celery stalks sliced
- 8 cups chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- 8 oz egg noodles
- 2 tbsp fresh parsley chopped
- salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the carrots and celery and continue to sauté for another 5 minutes.
- Pour in the chicken broth, shredded chicken, thyme, bay leaf, salt, and pepper. Bring to a simmer and let cook for 15-20 minutes, until the vegetables are tender.
- Add the egg noodles and cook until tender, about 8-10 minutes.
- Remove the bay leaf and season the soup with additional salt and pepper, if needed.
- Ladle the soup into bowls and garnish with chopped parsley.
