This classic comfort food is easy to make and always hits the spot.
And, when it comes to comfort food, sometimes it’s the simple things that bring us the most joy. That’s certainly the case for my son, who loves nothing more than a warm bowl of creamy tomato soup paired with a crispy grilled cheese sandwich. There’s something about the combination of the tangy tomato soup and the gooey, melted cheese that just can’t be beat.
Whenever we make tomato soup at home, my son is always the first one to ask for a grilled cheese to go with it. And it’s not just about eating the sandwich on the side – he loves to dunk it in the soup and let the flavors mix and mingle.
To make the perfect grilled cheese to go with your tomato soup, start by heating a non-stick skillet over medium heat. Butter (or try mayonnaise) one side of two slices of bread and place them butter-side down in the pan. Add a slice of your favorite cheese to one slice of bread, and then top with the other slice of bread, butter-side up. Cook until the bread is toasted and the cheese is melted, flipping once to ensure both sides are evenly browned.
Once you’ve got your grilled cheese ready, it’s time to start dipping! Just be careful not to let the sandwich soak up too much soup, or it might fall apart. My son likes to take small bites and savor the flavor combination with each one. Then, he’ll ask for a second grilled cheese – LOL!

Creamy Tomato Soup
Equipment
- 1 dutch oven or soup pot
- 1 blender or immersion blender
Ingredients
- 28 oz 2 cans or 28 oz of diced tomatoes
- 1 tbsp olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 1 tbso tomato paste
- 1 tbsp all-purpose flour
- 2 cups chicken broth or vegetable broth
- 1 cup heavy cream
- salt and pepper to taste
- fresh basil or croutons for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Stir in the tomato paste and flour and cook for another 2 minutes, stirring constantly.
- Add the canned tomatoes (with their juice) and the broth to the pot. Bring to a simmer and let cook for 15 minutes.
- Using an immersion blender or transferring to a blender, puree the soup until smooth.
- Stir in the heavy cream and continue to cook over low heat until heated through, about 5 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh basil or croutons, if desired.
